pad thai redux

i really like pad thai. like a tractor beam, if i see it on a menu anywhere i'll be sucked into ordering it. i've definitely got opinions about who has the best and worst pad thai in columbus.
but that's another post for another day.
i got to thinking about my love for pad thai and decided to try a dish that combined my favorite parts of pad thai and added some of my favorite ingredients. i'm really happy with the result. the sauce was just the way i like it and i really piled on the peanuts.

pad thai ala kitsune

sauce:
3 tbs fish sauce
2 tbs sugar
1 tbs vinegar
1 tsp crushed red pepper
squirt of huy fung garlic chili sauce

mix ingredients for sauce and set aside.

stir fry ingredients:
onion
carrots
yellow bell pepper
baby broccoli
water chestnuts

stir fry above ingredients and pour sauce over. bring sauce to a boil and let simmer for a couple of minutes.

serve over:

3 cups cooked brown rice

garnish with:

bean sprouts
crushed peanuts
rough chopped cilantro
lime wedges

This one got me thinking... in your opinion, what restaurant has the best Chinese food? Also, there's a family-owned Thai restaurant at Buckeye Lake that you have to try... some of the best Thai/Chinese food around... I'll have to tell you about it.

shaun, my favorite chinese restaurants in columbus are: hunan lion on bethel, china dynasty on lane ave, peking dynasty on 5th in grandview. for sushi: ba sho near sawmill & 161 and akaihana on old henderson. for thai: thai orchid on sawmill. and my favorite pad thai is from nida sushi in the north market. thanks for the comment!
